We ship fresh truffles Monday through Wednesday. To ensure you receive your order on time, we recommend that you place your purchase by 1:00 p.m. the same day. Orders received after that time will be processed the next business day.

The truffle should be stored in the refrigerator at a temperature of about 5°C. Wrap it in paper towels and store it inside an airtight container. It is important to replace the paper every day.
An old belief suggested storing the truffle in rice, but this is a mistake: rice would quickly absorb the truffle’s moisture, causing it to dry out.
Truffles are a highly perishable food and, if stored in the right way, retain their freshness for at least ten days.
We recommend freezing only black summer truffles, as other types of truffles tend to lose too much in both aroma and texture.
There are two main methods for freezing truffles. Some prefer to grate it before freezing it, so that it is immediately ready for use. Others freeze it whole, but only after they have cleaned it well and cut it in half to make sure the inside is intact. When it is time to use it, they take it out of the freezer about 7 to 8 minutes earlier so that they can grate it while it is still partially frozen; once it is completely thawed, in fact, it would become too soft to be grated properly. Personally, we prefer to grate it before freezing it because I find this method very practical. Summer truffles are harvested until the end of August, and we freeze them immediately after harvest, storing them until Christmas, for up to six months.
