Tartufo Bianchetto (Tuber Albidum Pico or Tuber Borchii Vitt.), also known as Tartufo Marzuolo, is a variety of the White Truffle. It has an irregular globular shape and a smooth peridium that is off-white during the earliest stage, while as it matures it becomes darker with russet spots. The gleba, initially whitish, also tends to become tawny and then purplish brown with coarse white veins. As for odor, Tartufo Bianchetto is initially faint, but when it reaches full maturity it becomes very strong, with a fragrant and heady garlic note.
