The Uncinatum Black Truffle, scientifically known as “Tuber Uncinatum Chatin,” is considered a variety of the Summer Truffle due to their similarities. Its name comes from the fact that the outer skin is covered with large warts that have a characteristic hook shape. It reaches its typical dark color when fully ripe, with an enveloping aroma and an intense flavor that stands out in the dishes it enhances. This type of Uncinatum Black Truffle is characterized by: A warty, black outer skin Dark flesh, similar to chocolate, with branched white veins when fully ripe A variable shape, often rounded but sometimes flattened Sizes ranging from that of a walnut to a tennis ball The Uncinatm Black Truffle is harvested from October to December, as its maturation begins in September and continues through December. It is found in forests, in areas shielded from sunlight, which otherwise hinders its maturation. It thrives in shaded environments, almost in symbiosis with broadleaf trees. It is commonly found in forests of black hornbeam, downy oak, and Turkey oak. The ideal soil for its growth is clay-rich, full of humus and water, as this promotes its maturation.
